Shawn's Porridge Recipe
- 3 cups organic large flake rolled oats
- 4 cups organic rolled spelt flakes
- 1 cup organic amaranth seeds
- 1 cup organic quinoa
- 1 cup organic raw, unroasted sunflower seeds
Combine ingredients and mix well. Store in a tightly sealed large glass jar or Tupperware container.
To make porridge in the morning:
Place ½ cup of mixture in a pot and add 1 cup of water. Add a pinch of salt, 1 tsp cinnamon, cover, and bring to a boil. Once it boils, turn down to low, and let cook about 15 minutes. The grains should be soft, not hard and gritty. Top with some raw honey and applesauce and enjoy!
Raisins, blueberries and ground flaxseeds can be added during cooking to increase flavour and health benefits.
Health benefits: This recipe provides complex carbohydrates for energy, as well as plenty of dietary fibre. Fibre is important for regularity, decreasing blood sugar and cholesterol, and decreasing levels of harmful hormones in the body that have been linked to some cancers. The addition of cinnamon and blueberries increase the anti-diabetic effects of this breakfast.
